What are the raw materials used in the batters?
The main ingredients in the batter are Organic Parboiled Rice (Idli Rice), Organic Dehusked Black Gram Beans (also known as Vigna Mungo Beans or Urad Dal), Organic Fenugreek Seeds, and Himalayan Pink Salt. The batters with beets, carrots, and greens are all made with certified-organic ingredients.
How are the batters made?
Making the batters is both an art and science. To make Plain Magic, the original version, it takes more than 24 hours. First parboiled rice, blackgram beans, and fenugreek seeds are soaked in water for a few hours. Then, the soaked ingredients are ground in a wet stone grinder. Once the batter is created, it is set to rise or ferment, which helps in the development of healthy digestive flora. We have collaborated with Washington University's Agriculture department to figure out the the right pH value that needs to be attained for optimal yeast grown for all the health benefits. We then perfected our process and variables in the process such as the right time to soak, time to grind, temperature to ferment, moisture level, etc..
Why do you use a stone grinder to make batters?
All our batters are stone ground. In our research, we found that stone grinders do not generate much heat during the grinding process and therefore keep the nutrition intact. The endosperm, bran, and germ remain in their natural, original proportions when ground in a wet stone grinder. Because the stones grind slowly, the germ is not exposed to excessive temperatures.
Why do the batters have air bubbles?
Air bubbles are formed during the natural fermentation process. Visual inspection for air bubbles is one of the steps in our quality control process. Having these air bubbles allows for the final product to have the right texture. Please note that when the lid of the container is opened for the first time, the draft of air that goes out at that moment might suppress the batter a bit by eliminating some of the air bubbles. This is normal.
How long do batters last?
All the batters last for three to four weeks when refrigerated. The batters freeze really well too. If you are going to be away from home, you can freeze the batters and then thaw them in the refrigerator for a day or so when you get back.
What about the Faithful Sidekick?
In our quest to create the perfect dipping condiment, we developed the Faithful Sidekick. This has 8 different organic, non-gmo ingredients that are lightly roasted and ground in perfect proportions. The ingredients include Organic Chickpea Lentils, Organic Blackgram Beans, Organic Sesame Seeds, Organic Shredded Coconut, Organic Whole Red Chillies, Organic Cumin Seeds, Organic Garlic Powder, and Himalayan Pink Salt. We would recommend adding a bit of organic Avocado oil or Grapeseed oil or any other type of neutral oil to a couple of spoonfuls of the Faithful Sidekick for a perfect side. Note that each spoonful of the powder has about 2 grams of protein and 5 grams of carbs, in addition to providing good supplement of Vitamin C. Iron, Folate, Phosporous, Magnesium, Copper, and Manganese.
